Why Dubai Municipality Approval Matters for Your Restaurant
Dubai's food safety framework — set out in the Dubai Food Code 2.0 — requires every food establishment to operate a documented cleaning and disinfection programme. That programme must specify which disinfectants are used in each area, the correct dilution and contact time for each product, how often surfaces are disinfected and by whom, and how compliance is monitored and recorded.
Using unapproved or incorrectly applied disinfectants is one of the most common non-compliances found in Dubai Municipality inspections. It is also one of the easiest to fix — if you have the right products and the right documentation before the inspector arrives.

Which Product for Which Area of Your Restaurant?
Choosing the right disinfectant for each area is not just about efficacy — it is a documentation requirement. Your cleaning programme must specify which product is used where, at what dilution, and with what contact time. Here is how the Bio Dubai range maps to a typical Dubai restaurant or café.
Food Preparation Areas — Worktops, Chopping Boards, Utensils, Prep Tables
For food contact surfaces you need a Dubai Municipality approved, non-tainting disinfectant that leaves no harmful residues. S01 (Premium Food Surface Disinfectant) is the strongest choice for high-risk prep zones — raw meat, raw fish, raw vegetable preparation — tested at 10°C against the widest organism panel including Salmonella typhimurium, Listeria monocytogenes, E. coli O157, and Yersinia enterocolitica. S02 is tested at 20°C against a standard panel and is well suited to general food contact disinfection across the kitchen.For a faster clean-and-sanitise workflow — particularly useful during busy service — the 4X, 4L, and 4S Concentrated Cleaner Sanitisers allow simultaneous cleaning and disinfection. At 4% dilution, 4X and 4L achieve a rapid 30-second contact time, tested to EN 13727 against Klebsiella pneumoniae and to EN 13704 for sporicidal activity against Clostridium difficile. The 4S can be used neat with 30-second contact for the same result.
High-Risk Environments — MRSA, Viruses, TB
If your operation handles immunocompromised guests, operates a healthcare catering contract, or requires the highest level of viral and microbial disinfection, SA42 Ultra Cleaner Sanitiser Concentrate is the product. It is QAC-free, alcohol-free, and chlorine-free — and is independently tested as bactericidal (including MRSA, Pseudomonas, E. coli), virucidal (Influenza A H1N1, Hepatitis B/C surrogate, HIV envelope viruses), yeasticidal, and tuberculocidal. SA42 operates via the SafeDose key-locked colour-coded dosing system, which controls concentration automatically and eliminates incorrect dilution risk.
General Surfaces, Dining Areas, and Front-of-House
SA43 Hygienic Multi Surface Cleaner Concentrate covers surfaces beyond the kitchen — dining areas, bar tops, service counters, door fittings, bathroom surfaces, and even upholstery and carpets. It has a fresh fruity-floral fragrance appropriate for guest-facing areas, and passes EN 1276, EN 13704, and EN 13727. Like SA42, it operates via the SafeDose dosing system. Bucket dosing is also available at 20ml per 5L of water for mop cleaning.
Salad and Vegetable Washing — A Commonly Missed Compliance Step
The 4K Chlorine Tablets are the recommended product for vegetable and salad washing — one of the most frequently missed compliance steps in Dubai restaurant inspections. Dissolve one tablet in 20 litres of cold water, ensure the tablet is fully dissolved before adding produce, allow 10 minutes contact time, then rinse thoroughly in potable water. The same tablets are used for food surfaces and dishwashers at one tablet per 5 litres (200ppm chlorine). The 4A Powder Sanitiser is an alternative chlorine-based option particularly effective in Dubai's hard water conditions.
Washrooms, Toilets, Drains, and General Floors
The 9A Pine Disinfectant is the correct product for washrooms, lavatories, urinals, drains, sinks, and non-food-contact hard surfaces. It contains a quaternary ammonium germicide effective against Staphylococcus aureus, E. coli, Salmonella, and Pseudomonas aeruginosa. For general surface cleaning, dilute 1:80 in hot water. For direct disinfecting and deodorising of drains, toilets, and urinals, use neat.
Ovens, Deep Fat Fryers, and Heavy Grease — Pre-Cleaning First
Before any disinfectant can work on a heavily soiled surface, that surface must be clean. The 7D Bacti Liquid Degreaser is the correct pre-cleaning step for ovens, deep fat fryers, heavily greased floors, and kitchen surfaces with baked-on oils and fats. For heavy soiling, dilute 1:30. For light to medium soiling, dilute 1:120. For deep fat fryer boil-out, use at 10% and bring to the boil for 10 minutes, then flush with clean water. Always follow with an appropriate disinfectant once the surface is clean.
Professional High-Performance Disinfection — S06
The S06 Premium Oxidising Disinfectant — based on peracetic acid (15%) and hydrogen peroxide — is for applications requiring maximum biocidal power. This is a professional-use-only product classified as UN3109 (Organic Peroxide, Type F). It must be handled by trained staff with full PPE and must not be mixed with any other chemicals.
